
I didn’t know that gourmet popsicle recipes were a thing.
I have spent the last couple of Summers busting out my tried-and-true yogurt berry popsicles, over and over. I have spent many hours scrubbing berry juice out of my weirdly absorbent counter top. And the sad fact is, the last couple of times I pushed out a batch of them, my family’s response was a bit lacklustre. We’re all a bit over the yogurt berry recipe. It’s time to branch out.
So I turned to the internet, of course. And amongst the fruit popsicle recipes, the yogurt popsicle recipes, the dairy-free popsicle recipes and the boozy popsicle recipes that I was expecting, I stumbled upon a popsicle niche I had not previously encountered.
Gourmet popsicles.
You’re like, this is not ground breaking, Klara. Well, call me sheltered. (After all, I do try to spend every Summer hiding under a box in my well-air conditioned dining room, waiting for the hot weather to just GTFO already. Ahem.) The day I stumbled on this concept was the day that Summer went up a notch in my books. And that’s a big deal.

First, let’s talk popsicle molds.
Because if you don’t have a mold, you can’t really proceed. The old faithful dixie cup and pop stick combo just won’t do these gourmet popsicles justice. A classic popsicle mold will definitely serve you best in the gourmet popsicle department. Here are my top picks from Amazon:
These silicone molds come with a funnel for easy filling, and 50 wooden pop sticks to get you started. Silicone is great for popsicle molds because you can just squeeze it to get your popsicle out – no running under hot water required!
This stainless steel mold just feels a little swish, a little fancy. I don’t know what the benefit of stainless steel would be, but as someone easily swayed by shiny things… I am fully into this.
This BPA-free kit comes with a funnel, a cleaning kit, an extra mold (I don’t know why) and a recipe book, and is an extremely economical choice.
Finally – if you’re the kind of person who suddenly realises at 3pm “Damn. I could really go a popsicle RIGHT NOW”, a Zoku popsicle maker might be your new best friend. The Zoku blast-freezes your popsicles in as little as 7 minutes (and there a ton of amazing accessories available to pair with it too!). That’s about as instant as you can get!

I love absolutely anything from How Sweet Eats because Jessica Merchant is a food genius. So these decadent pops made the top of my list!

Strawberries and Cream Popsicles
I’m a sucker for strawberries and cream ANYTHING. Maybe you are too?

That ombre colour gradient is DIVINE. And the icy cold caffeine hit certainly doesn’t hurt either.

This is Chris’s absolute favourite flavour combo, so these minty fresh ice lollies are a must for us.

Sweet and savoury tahini, honey-roasted fig and banana popsicles
As a foodie, I am so into this unique gourmet flavour combination idea. Gourmet popsicle recipes like this honestly make me feel pretty high-brow. I mean, check out my super refined palette.

Strawberry Shortcake Popsicles
Did you have a scented strawberry shortcake doll as a kid? I can still remember the smell of mine. Strawberry shortcake recipes always get me nostalgic.

How great is the word fudgsicle? Mmmm. Fudge. Fudge. Fudgey fudge. (Minus the dairy)

Any other coconut milk addicts in the house? Of course there are. Because coconut milk is life.

The use of sweetened condensed milk makes these popsicles… well… pop!

I love that these pops are actually made in a baking tray and sliced up. So clever! Plus, cookies. Awesome.

Strawberry cheesecake popsicles
Fact: Strawberry cheesecake is the second-yummiest flavour at Baskin Robbins (peanut butter chocolate is obviously the first). A cheesecake popsicle just sounds bloody fabulous.

Chocolate strawberry pudding pops
Chocolate and strawberry is GREAT combo. I am all about these pops this Summer.

If nothing is more refreshing to you than a big, cold glass of root beer on a hot day, try these ice pops. They might knock your socks off.

Mexican mango popsicles with chilli and lemon
Um, spicy popsicles? Heck yeah! Just like popsicles, chilli is a quintessential element to Summer. It makes sense that someone, somewhere, would have a crack at combining the two, and I am HERE FOR THIS.

Homemade tangerine creamsicles
Citrus is king at Summer time, and it’s nice to see a popsicle recipe leaning on a lesser-used citrus fruit.

The chocolate drizzle on these green mates is an easy way to add some serious prettiness to an otherwise plain-looking ice lolly. Yum.

Oh good grief. Toasted meringue-topped icy poles is the dream I didn’t know I had. I can’t get enough of this concept.

Hello beautiful. I am a mad sucker for brownies, and frozen on a stick? With icing and sprinkles? Shove it in my FACE, dude. Make me feel like a kid again.
