You know I love chicken nachos. After all, I brought you this chicken nacho pie a few months ago and we discussed this love at length. The whole background story. The embarrassing anecdote about my sister Steph. You’ve heard it all. Well. Sometimes I don’t have time to bake a pie from scratch just to hit the chicken nacho craving. So on those days, I make actual chicken nachos.
I know. Brilliant.
There is nothing clever about my nacho recipe. No secret tricks or fancy, gourmet ingredients. No hidden surprises. Just tasty, easy, honest cooking (if you can call a 1.5-minute zap in the microwave “cooking”). My favourite kind of recipe (if you can call a list of ingredients that you dump together in a bowl “a recipe”).
Note: The recipe specifies that you should use an avocado. An eagle-eyed reader might note that the pictured nachos are not, in fact, sprinkled with the tell-tale green flesh of nature’s greatest fruit (yes, it’s a fruit). Apparently when the husband is in charge of picking up the groceries, you’re supposed to specify “ripe avocado that can actually be consumed by humans”, or you risk ending up with one that is better suited to being smashed through a window with a poorly written anonymous threat taped to it.
I know that technically, nobody needs a recipe for chicken nachos. It’s not rocket science. But I’m writing it out anyway, because apparently I’ve got nothing better to do this afternoon than spell out the steps to humanity’s easiest go-to meal for the days when you can’t be arsed.

10-Minute Chicken Nachos
Bag of corn chips
Jar of salsa
1 whole rotisserie chicken, shredded
Grated cheese of your choice
3-4 leaves iceberg lettuce, finely shredded
2 spring onions, finely sliced
Ass-Kickin’ Chilli Sauce and sour cream, to serve (optional)
- Place a small covering of corn chips in the bottom of a bowl. Top with spoonfuls of salsa, sprinkles of chicken, and a handful of cheese. Repeat for a second layer.
- Microwave for 60 – 90 seconds, until the cheese is melted.
- Top with a handful of avocado, tomato, shredded lettuce, spring onions and a spoonful of sour cream.
- Impress all your friends and family with the tastiest, easiest, greatest nachos they will ever experience.
